Soft Organic Peanut Butter Cookies
In this family, we don't like crunchy cookies. Other than maybe Oreos! So, we set out on a mission to create a soft Peanut Butter Cookie. Recipe adapted from Martha Stewart.
- 1 1/4 cup all purpose organic flour
- 3/4 teaspoon baking soda
- 2 sticks organic unsalted butter
- 1/2 cup organic brown sugar
- 1/2 cup organic cane sugar
- 1 teaspoon vanilla extract
- 1 room temp egg (if not room temp yet, put in a bowl of warm water before using)
- 1 cup smooth organic peanut butter
- 2 tablespoons organic honey
- Mix flour and baking soda in separate bowl
- Cream both sugars and butter in standing mixer
- Add egg
- Add Peanut Butter + Vanilla
- Slowly add flour mixture with mixer on low (increase speed at the end to fully incorporate)
- Use a small instant release ice cream scoop to place cookies on a baking sheet lined with parchment
- Roll the cookies in a bowl of organic cane sugar
- Using a fork with a rocking motion (so it does not get stuck!) put fork marks on cookies
- Bake for 12 minutes and let them fully cool (about 1 hour) while still on baking sheets (they will fall apart if you try to move them to a cooling rack!)
