Oatmeal Chocolate Chip Cookie Pie/Cake
Adapted from a recipe by Half Baked Harvest
2 1/2 cups organic old fashioned rolled oats
2 Cups Organic All-Purpose Flour
1 Cup Organic Light Brown Sugar
1/2 Cane Sugar
1 tsp baking soda
1 teaspoon pink salt
1 1/2 cups Organic Coconut Oil (melted over medium in sauce pan)
2 Large Free Range Organic Eggs
1 tsp vanilla extract (preferably organic)
2 cups chocolate chips
Preheat Over to 350
Combine all the ingredients in one bowl! Start with the oats, then flour, both sugars, salt, melted coconut oil, eggs and vanilla. Mix with wooden spoon (you need some elbow grease to do this well!).
Fold in the Chocolate Chips.
Dump Entire Mixture into glass pie dish greased with lots of butter or coconut oil
Bake for 25 Minutes. Slice like pie!
