The Best Sour Cream Banana Bread
This banana bread is such a hit, I didn't even get a chance to photograph the entire loaf. My family devours it at lightning speed!

Preheat over to 350
1 stick organic butter (softened for 30 seconds in microwave or room temp)
2 extra large free range organic eggs
1 cup organic cane sugar
1 teaspoon baking soda
4 ripe mashed bananas
1/2 cup sour cream
1 teaspoon organic vanilla extract

Preheat over to 350

2 extra large free range organic eggs
1 cup organic cane sugar
1 teaspoon baking soda
4 ripe mashed bananas
1/2 cup sour cream
1 teaspoon organic vanilla extract
- Blend sugar and butter in mixer
- Next, add the egg
- Then, add the mashed bananas
- Add the sour cream
- Blend dry ingredients in a bowl, then pour slowly into the wet ingredients in the mixer (start on low speed and bring to medium speed until just combined)
- Grease baking tin with organic coconut oil and line with parchment
- Fold in nuts or chocolate chips if you wish, but we like this recipe plain in the Walsh house : )
- Sprinkle organic cane sugar on top (gives an amazing crunch)!
- Bake for 1 hour, cool slightly and remove from baking tin
